Ron Sofranko, principal of Wexford-based Sofranko Advisory Group, LLC, sees Sirena Taco Joint as a concept that could be an eventual expansion possibility since it caters to the changing tastes of a younger clientele.
He described it as fresh, light fare in a sociable environment that should be popular for singles and young adults. It’s a different approach than Mexican cuisine, he added.
“I think it’s a whole separate category and a whole separate segment,” he said.
